Zucchini Garden Chowder

This rich, hearty Chowder, is the perfect soup for a cool, Fall day.
Chock full of nutritious, delicious vegetables, and finished off with shredded cheese,
This is sure to please even the most picky eaters in your family.


2 medium zucchini (I used 1 green, 1 yellow) chopped
1 medium onion, chopped
3 celery stalks, chopped
4 medium carrots, chopped
1 teaspoon dried basil
1/4 cup butter
1 teaspoon salt
1/2 teaspoon pepper
1 carton reduced sodium chicken broth
1 14 ounce can diced tomatoes, undrained 
1/3 cup flour plus 1/3 cup of water for thickening
1 can evaporated milk
Shredded cheese

In large soup pot, over medium heat, sauté onion, carrots, celery and basil in butter until vegetables are tender.
Add salt, pepper and broth.
Bring to a gentle boil.
Add chopped zucchini and diced tomatoes.
Mix flour with water in a small container with tight fitting lid and and shake well to form thickening.
Pour into pot.
Add milk and heat through.
Add more seasoning to taste.

Serve with shredded cheese.
