Creamy Bacon Corn Bake

This delicious, creamy corn casserole dish,
 topped with bacon and fresh snipped chives
is chock full of rustic, country goodness!
8 slices of bacon, chopped
1/2 cup of finely chopped white onion
1/2 tsp. of salt
1/2 tsp. of pepper
1 clove of minced garlic
1 cup of sour cream
2, 500 gram packages of frozen corn
2 tbsp. chopped fresh chives
Heat oven to 350 degrees.
In large skillet, cook bacon 3-4 minutes and then add onion.
Continue cooking until bacon is browned.
Drain off fat except for 1 tbsp.
Reserve 1/2 of bacon and onion mixture.
Add in salt, pepper and garlic.
Stir in sour cream.
Add in frozen corn.
Heat through.
Pour into lightly greased casserole dish and top with reserved bacon and onion mixture.
Bake for 25 - 30 minutes.
Sprinkle with chopped chives.
