Fruited Wild Rice Stuffing

This is just an excellent stuffing recipe.
It is simple to prepare,
and has a wonderful flavour!
Plus, it can be prepared two days prior to stuffing your turkey,
which I absolutely love!
It's delicious stuffed into a turkey,
you can also spread it into a lightly greased, large casserole dish
and place bone in chicken pieces over top and bake.
Sort of like a "lazy" version of chicken and stuffing!

Fruited Wild Rice Stuffing
is sure to be a hit with your family!
2/3 package of bacon, chopped
(Reserve remaining bacon to lay over top of turkey)
2 cups of white rice
1 cup of wild rice
3 cups of finly chopped white onion
2 cups of finely chopped celery
1/2 cup of dry white wine, or apple juice
1 1/2 cups of dried cranberries
1 1/2 cups of raisins
3/4 cup chopped apricots
2 apples, peeled, cored and chopped
6 tbsps. of mixed dried Italian herbs
1 1/2 tsps. salt
1/2 tsp. pepper
Cook both types of rice according to package.
Set aside.
In large frying pan, fry up bacon until crisp.
Remove with slotted spoon, and set aside.
Sautee onions and celery in bacon fat.
Add in salt, pepper and mixed herbs.
stir to combine.
Pour in white wine or apple juice, and turn off burner.
Combine all ingredients in large bowl and mix well.
Stuff your bird,
or cover and refrigerate for up to two days.
