Potatoes Extraordinaire

Ah potatoes!
How is it, that such a humble vegetable can become the star of the show?
I suppose, it must be because of it's versatility.
There are hundreds, thousands even, of fabulous recipes highlighting the mighty potato!
of them all,
this is my entire family's absolute favorite way to eat them!
There is just something so comforting about eating this creamy, mashed potato casserole.
The texture is velvety smooth and the rich taste is seriously divine!
These potatoes are an absolute must have for all of my holiday menus.
And being able to prepare this dish ahead of time sure helps with preparing a stress free
Holiday Turkey Dinner!
This Potatoes Extraordinaire dish is so delicious,
I'm convinced that it is sure to become a family favourite in your house, too!

5 pounds of potatoes, peeled
salted water
1 8oz package of cream cheese
1 cup of sour cream
1/3 cup of butter
1 tablespoon of onion salt
1 teaspoon of salt
1/4 teaspoon of pepper


Cook potatoes in salted water until tender.
Drain and mash.
Add cream cheese cut into cubes, and the next five ingredients.
Beat until smooth and fluffy.
Turn into 3 quart casserole dish.
Bake in 350 degree oven until heated through.
If you baking cold casserole, you will need to stir ocassionally to prevent outside crusting.
Allow 20 to 30 minutes for warm casserole,
and at least 1 to 1/12 hours for cold.
If you are using frozen casserole, allow 1 full day to thaw.
